The Arturo Sanchez field-fattened Iberian ham is made from pigs older than 12 months. These pigs are crossbreeds with always a minimum of 50% Iberian blood, which are then raised and fattened free-range in open meadows, and whose meat is, after slaughter, dried and cured for over 30 months in natural drying cellars.
