The 100% pure Iberian acorn-fed pig is a primitive native breed from the pasture. Bred without crossbreeding and raised in it, it is the origin of MALDONADO's 100% Iberian Acorn-fed Ham.
Fed throughout its life under strict control with a diet of high-quality cereals, the pig maintains optimal quality control.
During the montanera season (the period of ripening and acorn fall), the animal freely consumes as much aromatic herbs and acorns as it desires, with over 2 hectares available for each.
Each 100% Iberian Acorn-fed pig from Maldonado arrives at the montanera healthy and athletic, a result of controlled nutrition and exercise in a free-range environment. It's during this period, with the intake of acorns, that the pig acquires the distinctive fat. This is why a pig under these conditions is considered special, with every gram of fat providing pure flavor and unsaturated fat.
The cold winters and hot summers in Extremadura contribute to a serene and personality-rich curing process, minimizing the loss of oleic acid from acorn consumption.
During tasting, the silkiness from the acorns, the unique aroma, and the brilliant color are notable.
