The quality of boneless acorn-fed Iberian shoulder (paleta) is the highest that can be achieved with products from acorn-fed Iberian pigs. That is, those that feed freely on acorns during the montanera period. These breeding conditions give acorn-fed shoulders greater infiltration of fat within the lean mass, which provides unique and distinctive flavor notes.
